Carne Asada Tacos

Hey ya’ll! My name is Mita and I’m so excited to share my all-time favorite recipe with you, CARNE ASADA TACOS!!  I’m sure my intro gave away that I’m from Texas; Austin to be exact! My girl Kim and I met when I was living in Florida.  It was like BFF at first sight! We met at our kids’ preschool. We have many similarities including having two boys each, them being the same exact age, and they also share the same birthday months. Besides having the commonality of love for our families, we both share a passion for food!

Truth be told, I actually stole this recipe from my husband, who bless his heart, makes the best damn carne asada tacos! This recipe just seemed fitting since Cinco De Mayo is in just a few days. Carne asada is as authentic as it gets! I know we will be making this while sipping on our margaritas!

Ingredients

• 4 pounds of Beef Round Tip Steak Wafer Thin
• 4 cups Goya Mojo Criollo
• 2 tbps fajita seaonings (your choice)
• 1 tsp Lawry’s seasoning salt
• 1 small onion ( cut into thick rings)
• 1 cup chopped cilantro

Serve with:

• Corn or flour tortillas
• ½ cup finely chopped onion (optional)
• ½ cup chopped cilantro (optional)
• 1 cup chopped cabbage (optional)
• Favorite salsa

Directions

1. In a large bowl rub beef with dry seasonings until well coated
2. Place rubbed beef in a sturdy Ziploc bag
3. Add onions and cilantro
4. Pour in mojo criollo mix, seal bag and mix well
5. Marinate 2-3 hours in the refrigerator or overnight for more intense flavor

Grilling:

1. Remove beef from bag and place beef strips in single layers on the grill and top with marinated onions
2. Grill on each side for 3-4 minutes
3. Once the carne asada is cooked remove onto tray and cut into fine strips

Assembling the taco:

1. Heat the tortillas
2. Add the carne asada, chopped onion, cilantro, cabbage, and your favorite salsa
